Almost people in West Borneo love spicy food, we are different with Javanese people that love sweet taste for every kinds of their food. Every food in West Borneo are mostly spicy. Chillies are very popular, not only given directly into the food in the cooking process, but also served as “sambal” to accompany the main food.
Sambal is a kind of very spicy sauce made from chillies and usually mixed with other ingredients such as; tomatoes, terasi (made from pounded and fermented shrimp), wuluh (a traditional star fruits), soy sauce, and so on. People in West Borneo will very enjoy their eating if there is sambal added into their food, more over for some food such as; meat ball, bakwan, tahu isi, kerupuk basah, rujak, and so on. Even for food that is already hot, as spicy porridge, they still put sambal on it, the hotter the better.
Sambal in West Borneo is a bit different with sambal from other provinces in Indonesia. In West Borneo the people add some special ingredients beside chillies. “Wuluh” and “jeruk sambal” (a small fragrant citrus) are the most matching ingredients to make sambal tastes better. They gave fragrant sour taste, that make sambal fresh and smells delicious. Those kinds of fruits are easy to find in West Borneo.
Sambal in West Borneo is very popular in the culinary life. It can increases people’s appetite. Whatever the food, sambal makes their tastes more delicious and fresh.
